Holy radicchio! We’re having grilled salad for dinner tonight.

Wrap thin slices of pancetta around fresh-from-the-garden radicchio stuffed with smoked provolone, and drizzle with olive oil.  Grill the wedges for 3 – 5 minutes or until cheese has completely melted. Serve hot or at room temperature.

This is a perfect combination of flavors but, then, what isn’t good with bacon?!
